當華燈初上之後，三盞燈一帶便會搖身一變成為澳門的街頭美食勝地，各式各樣的美食應有盡有

哪裡可以品嚐到最美味的街頭小食？無論問哪一位澳門人，答案一定都是三盞燈。三盞燈的正名為嘉路米耶圓形地，該名稱是以澳門總督 José Carlos da Maia（1914 - 1916）而命名的。這一帶在數十年前原是一片青蔥的牧地，後來在觀音廟附近的居民逐漸西移到此，才慢慢發展成為一個社區。時移世易，這一區已變得景物全非，不過，讓這個地方被稱為「三盞燈」的球狀燈泡，至今依然明亮地閃耀著光芒。

「我的祖母在三盞燈附近擁有一間房子。」現居香港的澳門人譚 回憶著說：「自60年代開始，我放假時便常回到那兒。我們會在吃過晚飯後到圓形地一帶散步，輕鬆地閒話家常，孩子們則在附近騎自行車耍樂。以前那裡有很多大排檔和臨時食檔，一碗湯麵才兩、三毛錢呢！」

現在，圓形地周圍幾條街道上仍然有不少臨時攤檔，其中位於三盞燈西面的飛能便度街更是美食愛好者的天堂。隨著夕陽西下，街道開始熱鬧起來，住在附近的居民紛紛來此購買烤肉、蔬菜和水果，為晚餐作準備；有一些乾脆在攤子上坐下來，吃碗麵或喝杯涼茶。有些店鋪也會在門外架起臨時攤檔，位於道咩卑利士街11-B的昌盛咖啡粉麵店便是其中一家。傍晚時分，店外擺著大大的竹籃子，裡面放滿了厚厚的蘿蔔糕和特大的叉燒包；店內的店員則以熟練的手勢包蝦餃和燒賣。

「三盞燈是在20至30年代，伴隨著紅街市的發展而逐漸形成的。」身兼建築師及城市規劃師的澳門居民 Nuno Soares 說：「現在這裡已經成為澳門的戶外購物商場，你可以在這裡找到任何一種貨品或服務。70年代之際，緬甸華僑及東南亞裔人士蜂擁而至澳門，並且在他們的居所附近，陸續經營起商店及餐館。」

葉永華在1978年創立的雅香粉麵店便是其中最負盛名的一間。葉永華現時擁有三間餐館，其中兩間位於圓形地東面的飛能便度街。這裡最出名的招牌菜式是緬甸美食，包括魚湯、椰汁雞絲撈麵及黑豆漿。「我們是澳門第一家賣黑豆漿的，廣東人都不用黑豆作甜食。」葉永華驕傲地說。

葉永華原為緬甸華僑，為了追求更安穩的生活，於1976年從緬甸移居澳門。當時大部分來澳的緬甸人都聚居在三盞燈一帶，他也從移居至今，一直住在本區，並以經營麵店為生。

「緬甸的麵很有彈性，而且比較粗。」他解釋說：「湯底都是我們自家炮製的，雖然己經為了適應本地人的口味而作了些調整，不過還是比中菜來得辣、鹹。緬甸的食物結合了鄰近國家如印度、馬來西亞、中國和泰國的食材，因此我們的菜式也反映出這幾個國家的文化。」

在過去30年間，葉永華看著這個社區發生了驚人的變化。「八年前，這裡有16間緬甸麵店，但現在只剩下寥寥幾間了。」他說：「最初，我們的客人都是區內的緬甸人。回歸以後，我們的生意比以前忙了很多，有很多來自中國大陸、香港及其他國家的遊客來光顧。」

區內另一間老店是位於光復街，由尹海經營的三良牛奶公司，至今己有80年歷史。最初，三盞燈一帶到處都是綠油油的草地，尹氏一家就在這裡飼養牛隻。後來，他們開始製作薑汁牛奶布甸。「那時，我一大清早便得起床去擠牛奶，然後就用那些牛奶來製作布甸。」尹海回憶著說。

雖然現在已不必一大早起床擠牛奶，但尹海仍然身兼數職，經常從收銀機櫃台跑到開放式廚房，用大型不鏽鋼蒸鍋和金字塔狀的鍋蓋製出一打又一打熱騰騰的布甸。儘管只是一間小店鋪，每日還得辛勤工作以賺取微薄的生計，但他已感到相當滿足。當每日限額的100至200碗布甸售清後，他便輕輕鬆鬆的關上店門回家去。

「三盞燈一帶具有濃厚的本土氣息，」Soares 表示：「就許多層面而言，它是澳門的心臟地點。近來政府在這裡進行了一連串的美化工程，有些建築物被清拆了，有些則進行整修。唯一恆久不變的，就是那盞燈。」

1960年代には、夕食の後に人々がこの円形広場に集まってはおしゃべりに花を咲かせ、子どもは自転車に乗って遊んだものだった。今でも夕暮れ時には、昌盛咖啡粉麵店などの著名な飲食店がたくさんの露店を出店させている。

1920年代頃から開拓され、今では屋外ショッピングセンターと化した三盞燈は、1970年代になると、東南アジアからの移民が次々に開業した。その中、今でも人気が高い店が、中国系ビルマ人葉永華が創業者の雅香粉麵だビルマ料理は近隣諸国の食材を豊富に取り入れた多国籍料理で、特に、ビルマの麺にはこしがあり、辛いのが特徴だ。

数年前まで16軒あったビルマ麺店は、数軒になってしまい、かつて客は移民してきたビルマ人ばかりだったが、今では、ほとんどが中国本土や他諸国からの観光客だ。もう一つ忘れてならない老舗が、ショウガ牛乳のプリンで有名な創業80年の三良牛奶公司だ。1日の販売数は多くても 200個で、完売すると閉店だ。

マカオは、中国返還以降、街を美化するために取り壊しや修復作業を繰り返してきたが、唯一、昔と変わらない佇まいを感じさせるのが三盞燈で、マカオ人の心の拠り所である

Why the Guangxi capital has a reputation as one of China’s premier green cities

Nanning is a vibrant modern city that still has some 40% of its land mass dedicated to green spaces – earning it a reputation as China’s premier green city. A favourable, subtropical climate, along with significant investment by local government, should see the city maintain a stranglehold on this title.

And Nanning‘s green treasures are not just confined to the city limits; excellent transportation connections make for a couple of outstanding alternatives for day trips – which can be combined together for an amazing weekend getaway.

The first of these is the stunning Detian Waterfall. Straddling the China/Vietnam border, it is formed by the crystal clear waters of the Guichun River, which meanders through lush vegetation against a sublime backdrop of limestone karsts. It mesmerises visitors in any season with enchanting prospects from any of the many viewpoints. It is the second largest transnational waterfall in the world, and superlatives such as that exclaimed by Beijing resident Liu Wenhui – “Gee, I’m not sure I’ve ever seen a more wonderful sight!” – flow almost as rapidly as the falls themselves.

While Detian is certainly the jewel in the crown, the entire surrounding area is an alluring array of spectacular scenery that is often referred to as ‘lesser Guilin’. Says local guide Liu Hong, “The reason some think it is ‘lesser’ is because this area isn’t as famous or popular as Guilin, so sometimes people may think it is less beautiful. But really, if you take a look you can see for yourself that it is just as good.”

A journey into this scenic territory should also include the ancient Huashan rock paintings. Many of the facts surrounding these 2,000-year-old rudimentary images remain shrouded in mystery, with experts still unable to decisively interpret their meaning. Local resident and driver Liu Hui sheepishly admits, “I haven’t ever seen the paintings because I didn’t realise they were so special for other people. However, many foreigners come to see them so perhaps I should come and take a look.” Just an hour later, as he gazes upwards, Liu captures and expresses the opinions of so many as he puzzles, “I can see them but I can’t understand what they mean. And how did they paint them so high up on the mountain?”

Back in the city, getting a genuine taste of this relaxed and friendly destination is simply a matter of venturing into one of the many parks or gardens. Located on the southeastern edge of the city, Qingxiu Mountain is one of Nanning’s better-known parks and is affectionately referred to as its ‘green lungs’. This peaceful, expansive area is overflowing with a massive variety of evergreen trees and tropical plants, and sprinkled with an assortment of attractions including temples, gardens, ponds, pagodas and even an adventure playground.

Local resident Zhang Yiming says, “I have been visiting the park at least three times each week for the past five years, since retiring. Walking my dog and enjoying the fresh, outdoor environment is a luxury so many people don’t have.”

For a more cerebral experience, try the meticulously maintained Guangxi Medicinal Herb Botanical Garden. Visitors can stroll in verdant surroundings while being wowed by the range of uses each plant has in traditional healing methods. The largest establishment of its type in Asia, this is the place to see around 4,000 varieties of plants, all arranged in similar sections to what is recognised as the most authoritative traditional Chinese medicine text ever written, Ben Cao Gang Mu (‘The Sickness Treatment Gallery’). The botanical garden has a fascinating relationship with the ancient text; it contains all the plants used in its prescriptions, displayed in accordance with the treatment areas of the body such as respiratory system, digestive system and so on.

Take the time to explore Nanning’s green spaces and you will very quickly come to realise that they are the main reason for its feel-good atmosphere – as well as being a constant source of pleasure and exuberance that will stay with you long after your visit has ended.

Day Tripper

Detian Waterfall is accessible via public bus to Daxin and Shuolong. CTS and most local travel agencies also run day tours departing every morning at around 7.30am. Entrance fee to the falls is RMB80.

The Huashan rock paintings must be accessed by boat from Ningming or nearby Panlong. Public buses and trains are available to Ningming. Entrance is RMB80. The entrance fee for Qingxiu Mountain and Guangxi Medicinal Herb Botanical Garden is RMB15. Public buses run from Chaoyang Garden.

Star-Studded luxury
Smartly located within the surroundings of the famous Bird’s Nest and Water Cube, Pangu 7 Star Hotel Beijing is the talk of the town. My friends and I love entertaining at home. We often have potluck, hotpot or barbeque after a long week. If I have the energy before dinner, I head to The Tree (43 Sanlitun Beijie, Chaoyang District, +8610 6415 1954) for some networking and socialising. Like its name implies, there are centuries-old trees to go with the yummy Belgian beer and thin crust pizza. If I feel like some bling, the gilded glam of Philippe Starck-designed Lan Club (4/F, LG Twin Towers, 12B Jianguomenwai Dajie, Chaoyang District, +8610 5109 6012) always puts me into a très chic mood. On Saturday, I start with a hearty brunch at American Steak and Eggs (Xiushui Nanjie, Jianguomenwai, Chaoyang District, +8610 6592 8088), a classic diner with a welcome bottomless cup of coffee. Then I check out the latest artists and exhibits at 798 Space (Dashanzi Art District, 4 Jiuxianqiao Lu, Chaoyang District, +8610 6438 4862). Osaka Afterhours

Dining With a gigantic crab hanging over its entrance, Kani Doraku (1-6-18 Dotonbori, Chuo-ku, +81 6 6211 8975) is the chain that offers anything from crab salad, to crab sushi to boiled king crab. While you’re in Osaka, be sure to try the Kansai-style udon pot at Mimiu (4-6-18 Hirano-cho, Chuo-ku, +81 6 6231 5770). Opened in the 1920s, Mimiu is known for its one-pot stew of seasonal ingredients.

因應當前的亞洲經濟，澳門傳統工藝及匠師各出奇謀，走出屬於自己的路

澳門曾是南中國一個繁盛的漁港，由漁民作業和信仰所衍生的傳統工藝，並未因工業生產而完全被淘汰。其中，神像雕刻工藝更正式被列入國家級非物質文化遺產名錄。

作為澳門最古老的神像雕刻店鋪「梁大昌」的第三代傳人，曾德衡一臉和藹的笑容，就像他手上的菩薩木雕一樣祥和，他耐心而從容地解釋這門工藝的源起和演變。

「從前漁民佔澳門人口三分之一，他們在海上作業風險大，所以漁民多會在船上放置各種神像，以求上天保佑。媽祖、洪聖爺和關帝都是最受歡迎的神祇。」他說。

梁大昌於1910年成立，梁大昌就是曾德衡的外公。除了承襲家傳的雕刻工藝，曾德衡也不斷改良技術，既前往江浙學習「寧波式截木法」，也到過台灣取經。80年代以前，澳門仍有漁業，故以製作民間信仰和道教神像為主；之後才轉型作佛像雕刻和修復寺廟，澳門三街會館在2002年重修就是曾德衡的傑作。另外，他也用了八年時間製作香港的妙法寺大佛。「大佛用上150條柚木，柚木不易爆裂，製成後再在神像上漆灰和貼金。」

對於這門工藝的傳承，曾德衡十分樂觀，他說：「傳承不單止是技術，還要掌握市場。」他指著身旁的姪子笑道：「我們已有第四代傳人了。」

另一個和漁業息息相關的工藝就是造船。從前，沙梨頭是澳門造船業的心臟地帶。現年88歲的林瑞，70年前就學會造船這門手藝，一路見證這個行業的興衰。

「我在禾記隆船廠學師，一般要學滿五年才能出師。頭三年沒有工資，不過船廠會包三餐，每天工作九小時。」林瑞回憶道：「滿師後，我的工錢變成每天四角，我也加入了工羨行會館，那是造船師傳的工會。我們每年農曆6月13日都會慶祝魯班師傅誕，他是造船和建築工人的守護神，至今這個風俗依然沒有改變。」

林瑞回憶，4月至7月是造船業的旺季，因為漁民8月份開始出海捕魚，所以春天就要把木船修補妥當。他說：「木船的木材主要是由山打根運來的山樟木，最難做的部份就是『三度』，即船頭、船尾的舵輪和船中間的主桅。船頭又叫龍頭，一定要師傅親自做。通常一個半月就可做好一艘船。」

至二戰爆發，林瑞被日本人帶到沙撈越做運輸船，戰後他回到澳門，木船大部分已為鐵船所取代，造船業變成夕陽工業，於是他改行做裝修，多年造船經驗造就的一雙巧手讓他贏得不少顧客。

林瑞最後一次造船大約在40年前，當年澳門的望族夏剛志委託他造一艘遊艇，林瑞就是在永樂戲院對面的位置，完成了生平最後一艘木船。

隨著城市發展，沙梨頭的船廠也遷至路環的荔枝碗，成了澳門最後的造船區。若對澳門造船工 藝有興趣，可到昔日漁民聚居的媽閣廟旁的海事博物館，一睹這個造船王國的遺風。

與神像雕刻和造船業相比，澳門的神香製作工藝與華人的生活關係更為密切。焚香在儒釋道三教中，均屬必備的敬神和敬祖方式，華人對神香的需求由古至今並未稍減。

於1968年成立的榮馨祥香莊，仍悄悄地躲在大三巴附近的老巷內，幾十年來生產過無法計數的神香。老闆譚健康說，澳門神香業最興旺的時期是60 年代，當時中國大陸正處於文革，神香完全停產，澳門幾乎獨市經營神香生意。

榮馨祥至今仍沿用人手製作神香，譚健康一面包裝神香一面解釋：「神香當中最上乘的是搓香，這是用傳統方式做出來的。通常工人會先將木糠和香粉混成粉團，然後把沾有膠水的竹枝放在堆放粉團的板上不斷搓動，直至竹枝沾滿香粉為止。」

一名熟練的神香工人一小時可搓約1,000支搓香，為了增加神香的味道，不少搓香也會加入檀香，所以即使搓香較其他工序較少的神香，如淋香和塔香貴二至三倍，需求量依然相當大。

「無論是哪一種香，都要經過曬香的工序，所以每到下半年乾燥季節就會很忙碌。80年代以前我們的曬香場在新口岸，現在已經搬去廣東了。」譚健康補充道。

榮馨祥一直保持家庭式經營，即使是60年代的全盛時期也只有幾名工人而已。對於神香業的前景，譚健康依然樂觀，他說：「自90年代開始，很多香莊看上大陸的廉價勞工而把工序北移。不過包括我們在內的一些香莊，仍保留澳門的加工場和門市，因為我們有許多忠實顧客，從開業至今，幾代都向我們購買神香供奉神明和祖先。」

如此看來，製作神香的傳統不會失傳了！

無形文化遺産

かつて、漁師達が神像が身を守ってくれると信じ、船上に奉ったことに由来する澳門神像彫刻は、2008年、中国の無形文化遺産に認定された。

漁業が衰退した1980年代から釈迦像を彫り始めたツァン氏は、甥と共に、彫刻技術だけではなく、ビジネス手腕も発揮している。造船も漁業に由来する伝統工芸だ。かつて、造船に使用された材料はマレーシア産のリュウノウジュだったが、第二次大戦後は鋼鉄や繊維ガラスを使用するようになったため、造船職人の需要は低迷した。茘枝碗が現在、唯一マカオで残存している造船所だ。長い中国の歴史で、線香は人々の信仰に欠かせないものだ。文化大革命で中国の線香業が廃れた1960年代にマカオの線香業が活気付いた。手作りの線香は価格が通常の線香の2倍だが、信仰深い人々にとって価格は二の次だ。近年、中国本土との競争が激化し、人件費の安い中国本土で製造しているが、販売の拠点は、今でも多くの顧客に喜んでもらえてるマカオであることには変わりはない。

廣西首府南寧擁有豐富的自然生態，景點星羅旗布，綻放綠城獨有的魅力

南寧是個充滿朝氣的現代城市，綠化覆蓋率達四成，素有「中國綠城」美譽。擁有亞熱帶氣候的天然優勢，再加上地方政府大規模注資的推動，讓南寧的「綠色」光環穩如泰山。

然而，南寧廣闊的綠色寶藏並不侷限於市區，方便的交通網絡及設施，讓出城一日遊的行程有更多元化的選擇，遊客可自行規劃完美的週末之旅。

其中遊覽的首選當屬氣勢磅礡的德天瀑布。這道跨越中越邊境的大瀑布，由歸春河清澈閃爍如水晶的河水，一路迂迴穿越農田、流經高聳的石灰岩山群而形成，是全球第二大跨國瀑布。觀者不論站在哪個角度，都會被她震魂懾魄的氣勢和壯麗迷住。來自北京的遊客柳文慧脫口而出的讚歎，猶如瀑布流瀉而下般湍急，她激昂地說：「天哪，我從沒見過比這兒更棒的景致了！」

德天瀑布毫無疑問是南寧景區當中，最耀眼的一粒寶石，也因此擁有「小桂林」的美稱。當地導遊劉鴻解釋：「稱做小桂林的原因，應該是這兒知名度不及桂林，所以一般人便以為景色不如桂林，其實仔細瞧瞧，這兒與桂林一樣迷人。」

遊覽這片迷人的風景區，不能錯過古老的花山崖壁畫。這些2,000年前遺存下來的壁畫，在專家持續不斷的研究下，卻仍然如謎樣般讓人參不透。任職司機的當地人劉輝難為情地說：「我從沒看過這些壁畫，也不知道他們有什麼特別，不過這麼多外國人來參觀，我也該去看看。」一小時後，望了半天，聽了別人七嘴八舌的看法，劉輝還是一頭霧水：「我看了這些畫，卻看不懂畫中的意義，也不明白古人為何要爬到這麼高的山壁作畫？」

回到市中心，想體驗南寧既輕鬆休閒又親切友善的特色，只要走進任何風景區或公園，都能領略當地的原味。位於市區東南面的青秀山風景區，不僅是南寧市甚具知名度的風景區，也被譽為南寧的「綠肺」，為這座城市增添綠意。

連綿廣闊、寧靜祥和的青秀山風景區，被豐富多樣的常綠樹木、熱帶植物覆蓋，四處點綴著廟宇、庭園、魚池、塔樓等景點，甚至還有一座探險遊樂場。當地居民張譯明說：「退休後這五年來，我差不多每個星期都來這裡三次，遛遛狗、透透氣。踏青對許多人來說算是奢侈，我覺得自己很幸運，能有這麼多時間待在這麼棒的地方。」

若喜歡寓教於樂的知性旅遊，可到精心維護的廣西藥用植物園，在這個嫩綠青翠的園林裡，你會驚訝地發現，每一株植物竟存在如此多的醫療功效。

廣西藥用植物園是亞洲最大的藥用植物園，園內栽植的品種多達4,000種，分別按中國最具權威的藥用植物著作《本草綱目》分類及研究。病理治療樓裡展示了藥草的實際療效，按照《本草綱目》的處方採集藥草，針對如呼吸系統、消化系統等疾病等進行相關治療。

花點時間慢慢發掘南寧的綠野、公園，你馬上就能了解南寧令人心曠神怡的原因了。這同時也是南寧源源不絕的活力之泉，就算離開南寧，那股活力彷彿也一直停留在心底。

Day Tripper

前往德天瀑布可乘搭公車，大新線、碩龍線都可抵達；中國國旅及當地旅行社亦提供一日遊行程，約上午7時 30分出發；瀑布區門票人民幣80元。遊覽花山崖壁畫只能從寧明或附近的盤龍搭船前往，門票人民幣80元。從南寧市到寧明可乘搭火車或公車。 青秀山和廣西藥用植物園的門票收費都是人民幣15元，遊客可從朝陽花園搭公車前往。
