4 Red Years - Exhibition of Photographs by Zheng Jingkang
On display at the museum is this valuable collection of historical images by the late Zheng Jingkang (1904-1978), a first generation professional photographer in China. of special interest are the 176 photos chronicling life in China between the Second Sino-Japanese war and the turbulent 1960s.

5 Procession of our lord of Passos
Follow the parade of Macau’s Catholics as they meander from St. augustine’s Church through the city’s alleys, all the while carrying the image of Jesus Christ bearing the Cross, to the Cathedral for an overnight vigil. The procession is a great look at a southern European tradition in Macau that’s been loyally practised since the 16th century.

Cool Science
Macao Science Center, the latest addition to the collection of landmarks that dot the coastline, is yet another spectacular piece of work by famed architect I M Pei and his two sons. Spanning an area of 20,000 square metres, the centre consists of 14 galleries that showcase exhibits related to space science, environmental conservation and meteorology, and a Planetarium with a semi-dome screen a whopping 15 metres in diameter.

Chef Anthony Alaimo at Wynn Macau refines a traditional southern Italian dish Text by Sally James

At il Teatro at Wynn Macau, every table in the restaurant is treated to a view of the Performance Lake’s colourful water show through the windows. But guests can also take in the drama happening in the open kitchen, where chef de cuisine Anthony Alaimo works his culinary magic. “I grew up eating traditional Italian-American food,” says Alaimo, a French-trained chef whose résumé includes a stint under the legendary Anthony Bourdain in New York as well as at Le Cirque, the Bellagio and Wynn Las Vegas. One of il Teatro’s most memorable signature dishes is inspired by Alaimo’s childhood memories of family dinners on Sunday night. Rigatoni Napolitani with Kurobuta Pork Braciole is a typical southern Italian dish made with tomato sauce and beef. “Instead of it being a pot in the middle of table, I refined it,” Alaimo explains.

He considers Kurobuta the Wagyu beef of pork, and uses it to imbue the dish with a distinctive flavour. The braciole is braised meat prepared as a roll of pork, prepared with Parma ham, guanciale and breadcrumbs. It’s then sliced and plated above the rigatoni. “I like using rigatoni because it functions well,” states Alaimo. “It is aesthetically good for the dish and its grooves catch and hold the sauce.”

“When you eat Rigatoni Napolitani at home, it is comfort food,” Alaimo explains.

Rigatoni Napolitani with Kurobuta Pork Braciole

1 Make Napolitani sauce with tomato, basil, shallot, garlic, olive oil, and braciole with Kurobuta pork neck, Parma ham, guanciale, breadcrumb and bread 2 Cook rigatoni to al dente and drain 3 Layer the sliced braciole over the rigatoni 4 Spoon sauce above and finish with shavings of Fontina cheese and finely grated Romano cheese

Architect Li Chung (Sandi) Pei unveils the Macao Science Center and speaks about his legendary father I.M. Pei Text by Rebecca Lo

• How did you become involved with the Macao Science Center?

Vitor Ng, President of the Administrative Council of the Macao Foundation, extended an invitation to my father. He was directly involved with the project for the first three months. With its distinctive geometric form sheathed in shimmering metal, the Macao Science Center is intended to be a landmark building. It will be unique in Asia.

You are also working on the purpose-built theatre for Dragone at City of Dreams?

Yes, Franco Dragone wanted to create a total environment for the City of Dreams show. The challenge was to meet the minimum programme requirements, as it is much more elaborate in terms of special effects than his other theatres. I felt like a movie director, since we had to take a number of different parts and make them all work together.

Any challenges working with your father’s legacy?

Our firm was modelled on his firm. But we are not him. We live in a different time and we have different types of work. Our father’s name is almost a brand. We have to be careful of how we cultivate and sustain quality. It would be easy to fritter away his reputation.

• What do you hate and love about Macau?

It is a pity that a city defined by water does not allow its citizens to get near it. I love colonial Macau and its 17th century architecture. And I love the food here!

After working for 16 years at his father’s firm I.M. Pei & Partners in New York City, Li Chung (Sandi) Pei and his brother Chien Chung (Didi) Pei established Pei Partnership Architects in 1992. Notable works include the Bank of China’s head office building in Beijing and the Suzhou Museum in Suzhou. The Macao Science Center is scheduled to open its doors to the public by Chinese New Year 2010 and the Theatre of Dreams will host its first show in summer 2010.
