Zi Yat Heen is a swank dining experience with refreshing twists on old favourites

Four Seasons hotels across the globe are known for their quality, and Zi Yat Heen upholds the brand’s high standards. Although some may sniff at this restaurant as a poor relation to the three-star Michelin restaurant Lung King Keen in Four Seasons Hong Kong, Zi Yat Heen is more like a gastronomic Cinderella.

Lofty ceilings, deep armchairs and gorgeous lattice screens all form a backdrop to the main attraction: a central wine cellar that every seat in the house faces. Indeed, the wine selection is extensive, creatively put together and varied enough in price.

Naturally, the dishes that go with all the vino have to be equally magical. And though a few traditionalists may consider the stir-fries lacking in the ‘wok fire’ typically found in excellent Cantonese restaurants, Zi Yat Heen’s dishes are colourful, fresh and with just the right touch of Macanese influence to remind you where you are. Baked lamb chop, for example, is an East-West fusion delight. The somewhat bitter coffee sauce contrasts with the succulent pink lamb for a riot of flavour. Double-boiled soups are light and thoroughly infused with tastes of the sea, whether it is lobster and shark’s cartilage or shark’s fin marrow with brassica. Sauteed prawns are decorated with a scatter of tea leaves that subtly add a smoky texture. And the crispy taro nest stays crunchy throughout the meal, as the sautéed veggies it holds are stir-fried without a sauce to retain that just-cooked bite.

Jenny Sam and Jordan cheng talk about their rôles in musical Hi Dad…Bye…

Art-in-Residence Project is a three-year, three-phase project initiated by the Macao Cultural Centre to nurture local talent, culminating in the original musical Hi Dad… Bye… Tell us about your experience with the Art-in-Residence Project.
Jordan Cheng: Macao Cultural Centre has hosted many training workshops. I learned performance techniques through professionals who guided me through the whole process of developing and staging a musical.
Jenny Sam: Over the past two years, many new mentors have helped me to advance my acting and performing skills.

What talents do you bring to Hi Dad…Bye…?
JS: I love to sing and dance, although I feel I am better at singing than dancing.
JC: I also prefer singing to dancing. Having helped develop this production, I think musicals are advanced art forms that require a lot of skills and multi-tasking.

What makes this musical so special?
JS: Hi Dad…Bye… is a home-grown story. I think the most important part is its narrative. Many musicals are romances, while ours is a story between a father and his son.
JC: Macanese families are very close, and Macau has changed a lot in recent years, which has taken its toll on family relationships. Our musical reflects these changes.

Why a Macau musical?
JS: Macau has a unique history that forms a good basis for musicals.
JC: We have a lot of stories with meaning and value. Musicals are a way to tell our stories – of bringing them to life for a wider audience. The medium is magical, as well as an entertaining story-telling method.
JS: The magic is the best part about being in a musical.

Jenny Sam (left): Ever since she began playing the piano at the age of three, Sam has enjoyed being on stage. She worked on the lyrics and is one of the performers.
Jordan Cheng: A film aficionado, Cheng participated in high school musicals and has a diploma in piano performance. He is the playwright and lyricist.
